Crevette with Arugula

Shrimp with Arugula

Serves 4

INGREDIENTS:

 

 

     4 each shrimp, cleaned and de-veined
     4 fl. oz. olive oil
     4 Tbls. garlic -- sliced thin
     1 large pinch  red chili flakes – to taste
     4 oz. white wine
     2 handfuls  fresh arugula
     1 handful sweet 100’s tomatoes
     1 large pinch  sea salt – to taste
     salt and pepper – to taste


METHOD OF PREPARATION:

In a sauté pan, heat oil until slightly smoking. Toss in the shrimp and garlic. Sauté until garlic has a little color (just a few minutes), then add the chili flakes and hit with the white wine. Careful – it may flame as the alcohol burns off! Toss in the arugula, the sweet 100’s and sauté until just wilted. Add the salt and pepper to taste. Garnish with sea salt.
