METHOD OF PREPARATION:
In a sauté pan, heat oil until slightly smoking. Toss in the shrimp and
garlic. Sauté until garlic has a little color (just a few minutes), then add
the chili flakes and hit with the white wine. Careful – it may flame as the
alcohol burns off! Toss in the arugula, the sweet 100’s and sauté until just
wilted. Add the salt and pepper to taste. Garnish with sea salt.
